Cooking with gas compared to electric

I have moved into a place with gas cooking for the first time.
No waiting for 20 mins for the electric oven anymore.
Instant cooking!!!
Any other advantages with cooking with gas?

Asian cooking relies on gas. No chef in an Asian restaurant would cook with electric. The flavor profile is different due to the way the heat is transferred to the produce. Gas ovens are also not as dry as an electric oven and produce better cakes (my opinion). It is sad the Victorian Government is using home cooking as an excuse to ban gas in new homes. Yet new commercial premises are still able to continue using gas and probably contribute more pollution than a home as they keep the gas stoves running almost all day. :_(
