Australia has it all. If cost was no object I'd get a great 4x4 vehicle and do the whole of Australia's remotest districts. Cape York, the Gulf country, Northern Territory, The Top end of Western Australia, the desert crossings from Central to Western Australia, Tasmania in different times of the year to experience its luscious friuts, and its breath-taking beauty.
